The FDA banned powdered latex gloves in health care facilities in 2017, but most health care entities had quit using them anyway because of the risk to health care workers, patients, and visitors. At their peak use, 10-15% of health care workers tested were allergic to latex. Many of those workers got out of health care for their own safety.

The 2 reasons to avoid them: latex gloves caused people to become allergic and caused allergic reactions in those already allergic. Reactions range from itching & rashes, to coughing and sneezing to anaphylactic shock. And there are substitutes like vinyl, polyethylene, and nitrile.

Unfortunately, people in restaurant work don’t know about these risks and don’t have the kind of information structure that hospitals and health care providers do. Latex allergy can be a serious and life-threatening disability. Using them in food preparation can cause serious reactions in people who eat the food because of the powder and proteins coming off the gloves onto the food. And even so-called powder-free gloves are allowed to have up to 2 mg. of powder — way more than enough to cause a reaction.
